Flaxseed Pancakes

1/2 Cup Flaxseed Meal

2 eggs, Beaten

2 tbsp. + 2 tsp. Unsweetened Almond Milk (or other milk)

1 1/2 tsp. Lemon Juice

1/2 tsp. Baking Soda

1/8 tsp. Salt


Step 1: Mix together all the ingredients in a bowl. The mixture will be sticky because of the flax. If it is too thick, add more almond milk or water.

Step 2: Heat a skillet over medium heat. Once hot, add a bit of cooking oil. about 1/4 cup of batter for each pancake and gently spread it out with a spoon. Let it cook for 2-3 minutes per side or until edges begin to firm and bubbles begin to burst. Flip and cook on the opposite side for 2-3 minutes.

Step 3: Serve with Savory Sauce and green beans or bacon (or both)
